CHICKEN BURGER

The summer BBQ season is about to get started.
I think most of us will agree there is nothing like a great burger right off the grill! Personally I love a burger that is big on flavor, with lots of fixings.
You can add a Tex-Mex flair to your next summer BBQ with this Chicken Burger recipe. It?s packed with flavor, grilled to perfection, then piled high with smashed avocado and smothered in chipotle mayo?a delicious, big and bold new burger to add to your grilling season menu!
With a burger like this, you need a bun that can stand up to the test. The Pepperidge Farm? Farmhouse Hearty Buns are up to the task. An ordinary bun would have fallen apart loaded with the smashed avocado and chipotle mayo, but the Farmhouse Hearty Buns held up great!
To make the chicken burgers, you?re going to gently mix your ground chicken, grated onion, minced garlic, smoked paprika, and chopped cilantro with a liberal grinding of salt and pepper.
Form your patties and then refrigerate them for at least fifteen minutes to help keep them from falling apart on the grill. You?re going to grill them for four to five minutes on each side.
For the chipotle mayo, you?ll combine the mayonnaise, a chipotle pepper in adobo sauce plus a little extra adobo sauce, lime juice and chopped cilantro in a mini food processor. Refrigerate it until you are ready to use it.

- Chicken Burger
- 2 lbs ground chicken
- 1/2 cup onion, grated
- 4 garlic cloves, minced
- 2 teaspoons smoked paprika
- 1/2 cup cilantro, chopped
- Liberal grinding of salt and pepper
- Chipotle mayo
- 1/2 cup mayonnaise
- 1 chipotle pepper in adobo sauce
- 1 teaspoon adobo sauce
- 2 tablespoons lime juice
- 1 tablespoon chopped cilantro
- Smashed avocado
- 1 jalape?o, seeded and chopped
- 2 tablespoons, red onion, chopped
- 2 tablespoons lime juice
- 2 avocados, peeled and coarsely smashed
- 1 tablespoon cilantro, chopped
Instructions
- Chicken Burger
- Combine all ingredients and mix together. Do not overmix!
- Create 6 patties, refrigerate for at least 15 minutes to keep them from falling apart on the grill.
- Cook for 4-5 minutes each side.
- Chipotle Mayo
- Combine all ingredients in a food processor and mix to blend. Refrigerate until ready to serve.
- Smashed Avocado
- Combine jalape?o, red onion and lime juice; allow to sit for a couple minutes to soften the "bite" of the jalape?o and red onion.
- Add avocados to mixture; coarsely smash them into chunks.
- Stir in cilantro.
- To assemble Avocado Chicken Burger
- Add cooked burger to bun
- Top chicken burger with smashed avocado.
- Spread chipotle mayo on the inside of the other half of the bun and place on top of the smashed avocado mixture.
