Strawberry Cheesecake Tar + VIDEO

I don?t know about you, but sometimes I get this sudden craving for cheesecake. Craving for thick, creamy, sweet cheesecake? But zero desire to actually make it and even less patience to wait for it to cool and set. So what a girl in a small town gotta do? No bakery to drive up to order the damn cheesecake!

Well, it?s time to improvise and simplify things, you know. Good thing I always have a stash of frozen puff pastry! And the weather being so hot, it takes no time for it to thaw on the counter. So instead of messing with food processor and graham crackers, we?ll just use our trusted puff pastry. Easy-peasy, yeah?

Now things are going to get easier yet!


Ingredients:

  • 4oz (115gr) cream cheese, softened
  • 2 tablespoons sweetened condensed milk
  • 1 puff pastry, thawed
  • 1/4 cup strawberry jam
  • 1 egg yolk

Directions:

  1. Preheat the oven to 400?F (200?C). Line a baking sheet with a parchment paper.
  2. In a medium bowl, mix together cream cheese and sweetened condensed milk until smooth.
  3. Unfold the puff pastry on the prepared baking sheet. With a sharp knife, score the pastry about ? inch from the edges to create a border. Be careful not to cut all the way through though.
  4. Spread the cream cheese mixture evenly on the crust inside the border.
  5. Spoon strawberry jam on the cream cheese mixture and carefully swirl it into the cream cheese mixture.
  6. In a small dish, mix the egg yolk with 1 tablespoon of water to make an egg wash.
  7. Brush the egg wash on the edges of the tart.
  8. Bake the tart for 20-25 minutes, or until the crust is puffed up and golden brown. Cool on wire rack for 5-10 minutes before serving.
